    SMOKEY COWBOY CHICKEN PIZZA

    Source of Recipe

    Mama Mary's

    List of Ingredients

1 Mama Mary’s 12 inch Gourmet Pizza Crust
Olive oil to mist the crust
2 cloves of garlic, pressed or chopped, divided
    ½ cup ketchup
    1 teaspoon Barbecue Seasoning
    1 teaspoon Smoke Seasoning
    1 teaspoon apple cider vinegar
¼ cup red onion, chopped fine
1 green onion, thinly sliced, green and white parts
1 boneless grilled chicken breast, shredded
6 strips of cooked bacon, drained and crumbled, divided
½ cup Monterey Jack & Colby Cheese, shredded
3-4 Roma tomatoes, peeled and thinly sliced
    ½ cup Mozzarella Cheese, shredded
    Salt and pepper to taste
    Barbecue Seasoning, as desired

    Recipe

    Preheat oven to 450°F.

Line a vented pizza pan or large baking pan with parchment baking paper that has been trimmed so edges will not hang over the pan or touch the oven wall. Place pizza crust on parchment-lined pan. Mist the crust and the rim with olive oil. Sprinkle one clove of pressed garlic over the oiled crust. Set aside.

In a small mixing bowl combine ketchup, barbeque seasoning, smoke seasoning, vinegar and remaining clove of pressed garlic. Mix well and spread the sauce over the crust.

Layer the remaining ingredients over the barbeque sauce in the following order: red and green onions, shredded chicken, ½ the bacon, Monterey Jack Cheese, sliced tomatoes, remaining bacon topped with Mozzarella Cheese. Salt and pepper as desired. Sprinkle with additional Barbecue Seasoning, as desired.

Reduce oven temperature to 425°F. Keeping pizza on the pan bake for 12 minutes. To crisp the crust, remove from the parchment-lined pan and place crust directly on the oven rack for 2-3 additional minutes. Remove from the oven and cool for 5 minutes. Slice and serve.
