pizza dough
flour and yellow cornmeal
sour cream
mozzarella cheese, grated
parmesan cheese, grated
hot Italian sausage, cooked then ground in a food processor to an even texture
red, yellow and orange peppers, roasted at 400 degrees for 30 minutes, peeled and sliced
red onions, cut in half, roasted and sliced
broccoli buds, blanched
mushrooms, sliced thin
Recipe
Heat a pizza stone in a 450 degree oven for at least a half hour. Allow your dough to rest at room temperature for about 30 minutes. Spread some flour on a cutting board, then roll out your dough to the appropiate thickeness. Dust a cookie sheet, without sides, with some cornmeal. Place the rolled out dough on the cookie sheet. Spread sour cream on the dough, using the same amount as you would red sauce. Sprinkle the sour cream with some of the cooked, ground hot sausage. Next, spread the pizza with the mozzarella, then the parmesan. Evenly distribute the cooked vegetables on the pizza. Remove the stone from the hot oven. Slide the prepared pizza from the cookie sheet onto the hot pizza stone. Place in the hot oven and cook for 12-15 minutes or until the cheese bubbles and the crust is a golden brown. Remove from the oven, slide the pizza onto the cutting board from the stone, slice and serve.
HINTS:
Toppings are a matter of choice. Green peppers, regular yellow onions, even thinly sliced pepperonni all serve to enhance the eating experience.
