    Spinato’s Specialty Pizza “L’Italiana”

    6-8 oz dough, rolled or hand tossed to about 12 inches
    4 oz. of pizza sauce
    4 oz. of fresh baby spinach
    1 oz. extra virgin olive oil
    4 oz. feta cheese
    4 oz. mozzarella cheese
    2 oz. roasted red repper

    Recipe



    Preheat Oven to 425 degrees.

    Roll your dough to about 12 inches. Then add pizza sauce and spread evenly. Add 2 oz. of each, feta and mozzarella on top of the sauce. In a separate pan, combine 4 oz. of baby spinach and 1 oz of olive oil. Mix very well so that all the spinach leaves are lightly covered in oil. This will help to keep the spinach firm. Dump spinach onto pizza. Distribute spinach evenly across pizza. Sprinkle 2 oz. of sliced roasted red pepper. First add the remaining 2 oz. of mozzarella first, then sprinkle 2 oz. of feta. The will allow the feta to cook a little better and brown.

    Cooking time: About 20 minutes or until cheese begins to brown. Check often after 15 minutes. Cut and serve. Serves 2-3 people.
