    Pasta Cosi, Branford
    Pizza Dough
    (Ingredients for 6 6 oz portions of dough)

    * 1/2 qt warm water
    * 1 oz. yeast
    * 4 oz. butter
    * 1/4 oz sugar
    * 1/2 oz. salt
    * 2 pounds (6 oz) All Purpose Flour

    Place all ingredients in mixing bowl
    Mix for 10 minutes
    Let the dough rise once in bowl (covered)
    Once the dough has risen, punch it down and remove from bowl
    Portion out the dough to 6 ounces
    Round the dough into balls, place them on a paper lined baking tray and store in the refrigerator

    Topping for pizza

    * 1/2 cup rock shrimp
    * 3 artichokes, sliced
    * 1/2 roasted red pepper, sliced
    * 1 diced plum tomato
    * Fresh basil to taste
    * 1/4 cup goat cheese, crumbled
    * salt (pinch)
    * Pepper (pinch)
    * 1 teaspoon chopped garlic
    * 1 tablespoon Extra Virgin olive oil


    Roll out the dough. Then turn a cookie sheet upside down, sprinkle cornmeal on it. Place the dough on top of the cornmeal. Drizzle on some olive oil and add the toppings.

    You can use any topping you like.

    We're using artichokes, plum tomato, and the roasted red pepper. Saute the shrimp in garlic. Put it on the pizza. Add the goat cheese and top off with fresh basil.

    Bake in a preheated 500 degree oven for about 5 minutes.
