The Buffalo Wing Calzone

List of Ingredients
1. One 3-lb. bag frozen white bread dough (should have three loaves in it).
2. One 16-oz tub ricotta cheese.
3. Three or more cloves of garlic (to taste), minced.
4. Two or three eight-ounce packages shredded mozzerella cheese.
5. Two four-ounce packages crumbled blue cheese.
6. Three boneless, skinless chicken breasts, or else two bricks of extra firm tofu.
7. DIY hot sauce (optional): 1 cup white vinegar, 1/4 cup Tabasco sauce, 2 TBSP. butter.
8. One jar of your favorite tomato sauce, for dipping.

LAZY GEEKS NOTE: You can buy pre-minced garlic and pre-made hot sauce. Make sure it's "Hot Wing Sauce", though. You can also use blue cheese dressing (2-3 TBSP), you miserable culinary Philistine.
Equipment:
1. Stove with an oven that can be set to "broil".
2. Two medium-sized pans for your sauces and two good-sized bowls for your cheese filling.
3. Two baking sheets (disposable ones are fine).
Instructions:
1. Thaw the dough overnight in your fridge. Grease each loaf with a little olive oil or butter and wrap in plastic.
2. On the big day, set your oven to broil. Place the chicken breasts (or tofu, sliced in half lengthwise) on a baking sheet and place on top oven rack for 25 minutes. The juices may burn, but the meat will be fine.
3. WASH YOUR HANDS WITH SOAP, as raw chicken can be hazardous.
4. Combine the ricotta, garlic, and blue cheese in one bowl. Mash it up with your hands. Pour the shredded cheese into another bowl and set aside.
5. Pour hot sauce and tomato sauce into their respective sauce pans and simmer them on low heat.
6. Get your dough. Cut each loaf in half and shape them on plastic wrap into six 8-inch circles. If they aren't stretching as big as you want, let them rest for five minutes and try again. That should do the trick.
7. When the chicken is done (juices run clear), cube all the breasts (or tofu) and dump them in the hot sauce. Stir until coated.
8. Set the oven to 350.
9. On each circle, place a layer of shredded cheese, two globs of cheese/garlic mix, and a spoonful or two of hot-sauce soaked chicken (tofu).
10. Place another layer of shredded cheese over the chicken and fold the dough over so the calzone looks like a giant pierogie.
11. Bake the calzones on baking sheets for 25-30 minutes or until dough is golden brown.
12. Serve very hot with a side of hot tomato sauce and plenty of napkins.
