    Zazu Pizza d'Uovo

    List of Ingredients




    1 pizza dough ball (see recipe below)
    4 ounces pizza sauce (see recipe below)
    1/4 red onion, julienned
    1 egg
    1/4 cup fresh grated Parmesan
    -- Da Vero Extra Virgin Olive Oil

    Recipe



    Preheat your oven set up with a pizza stone as high as it will go.
    Roll out pizza dough. Top with sauce. Sprinkle with onion. Cook in
    oven about 3 minutes. Pull it out and crack an egg on top. Gently
    slide pizza back onto pizza stone. Cook another 3-4 minutes until
    crust is crunchy and browned. Sprinkle with Parmesan cheese and Da
    Vero Olive Oil. Slice.


    Zazu Pizza Dough
    Makes 4 12-inch pizzas

    1 3/4 cups warm water
    1 teaspoon yeast
    4 cups flour
    1/2 cup semolina
    2 teaspoons honey
    1 teaspoon kosher salt

    Combine the water and yeast and let activate, until dissolved and
    starting to foam. In a mixer with the dough hook attachment, mix the
    flour, semolina, honey and salt into a yeast mixture until the sides
    are clean. Remove from the bowl and knead until smooth, at least 5
    minutes (adding flour as necessary). Let rise in a warm place until
    doubled in size. Divide into 4 balls and allow to rise by half again.
    Preheat your oven, set up with a pizza stone, as high as it will go.
    Roll and toss each ball into a 12-inch circle and top as you like and
    bake.


    Zazu Tomato Sauce
    Makes 2 cups sauce

    1 28-ounce can peeled tomatoes
    2 cloves minced garlic
    2 tablespoons olive oil
    1 tablespoon chopped Italian parsley
    1 tablespoon chopped fresh mint
    2 teaspoons kosher salt
    1 teaspoon chili flakes

    Chop tomatoes in a food processor. Combine all ingredients.
    Refrigerate leftover sauce for up to a week.

    Makes 1 12-inch pizza
