    BAKED CHICKEN WITH CUMBERLAND SAUCE

    List of Ingredients




    1 cup freshly grated Parmesan cheese
    4 cups seasoned bread crumbs
    6 tablespoons sesame seeds
    10 to 12 pieces boneless chicken
    1 cup melted butter

    Recipe



    Preheat oven to 350 degrees. Combine cheese, bread crumbs and sesame seeds. Dip chicken in butter and then in bread-crumb mixture. Place pieces in an ovenproof baking dish and dot with butter. Bake 20 to 30 minutes.

    CUMBERLAND SAUCE

    1 cup red currant jelly
    1 (6-ounce) can frozen orange juice concentrate, thawed
    8 tablespoons dry sherry
    2 teaspoons dry mustard
    1/4 teaspoon ground ginger
    1/2 teaspoon hot pepper sauce

    Combine all ingredients in a saucepan and simmer until smooth. Serve with warm chicken. Makes 10 to 12 servings.
