List of Ingredients
1 lb. VERMICELLI
3 SCALLIONS, diced
1 RED BELL PEPPER, diced
1 CHICKEN, boiled, reserve 1 cup broth
1 can (4 oz.) MUSHROOM tops
1 can (4 oz.) BLACK OLIVES, diced
1/2 lb. CHEDDAR CHEESE, grated
1 cup BREAD CRUMBS
Recipe
Bone and cube the chicken. Cook vermicelli in boiling water for 8 to 10 minutes. Drain and set aside in a large bowl. In a small amount of oil saute the scallions and peppers in a small skillet. Add to the vermicelli and then add the chicken, mushrooms and olives. Combine all. Place chicken mixture in a greased 9x13 baking dish. Pour the chicken broth over all and top with the grated cheese. Sprinkle bread crumbs on top. Bake at 350 degrees for one hour.
