Baked Miami Chicken

1 C. juice from lemons, limes or sour oranges
1 tsp. salt
1 tsp. freshly-ground black pepper
1 1/2 C. dry white wine
6 cloves garlic, crushed
1 tsp. dried basil
3 broiler chickens, quartered
1/2 lb. butter, melted
3 C. crumbled potato chips
Recipe
In a large bowl, combine the juice, salt, pepper, wine, garlic, and basil. Add the chicken pieces, cover, and marinate in the refrigerator for 4 hours, turning occasionally. Remove the chicken pieces and pat dry.
Preheat the oven to 400ºF. Dip each chicken piece into the melted butter and then roll in the crumbled chips. Arrange the chicken in a large shallow baking dish and bake uncovered for 1 hour.
