    Ingredients for Stuffed Chicken Breasts


    2 Free Range Chicken Breasts
    2 Apricots
    Spinach to taste
    Bleu cheese to taste
    Salt and pepper to taste
    Ingredients for Sauce


    1 Cup Port
    1 Cup Chicken Stock
    2 Tablespoons Mango Chutney

    How to prepare the Stuffed Chicken Breast
    First, take the 2 free range breasts and cut each one down the middle. Next, stuff Chicken Breast with spinach, blue cheese and an apricot, then salt and pepper to taste. After you have stuffed the Chicken Breasts, bake in a 375 degree oven, breast side up for 20 minutes.
    How to prepare the Sauce
    Add Port and Chicken Stock to saucepan and reduce by 1/2. Add salt and pepper to taste. Add 2 Tablespoons of Mango Chutney.

    Last, time to eat! Pour over the breasts and side your entree with organic mashed potatoes and vegetables.
