Recipe Introduction
"Borracho Pollo" means drunken chicken in Spanish.
List of Ingredients
1 can Mexican lager
1 whole chicken
1 chipotle pepper (smoked, dried jalapeno)
1 tsp finely chopped cilantro
1/4 tsp cummin
1or 2 tsp. salt
Juice of 1 lime
1 stick unsalted butter (melted)
Recipe
Mix half of the beer with the chipotle, cilantro, cummin, salt, lime, and melted butter. This is best done in a blender. Using a marinating syringe, vaccinate the bird with the mixture, making sure to get plenty of the mixture in the breasts.
Put the bird in the fridge and build your fire in the outdoor grill. When the coals are white take the chicken and set it down on the remaining beer in the can so the beer can is inside the cavity. Place this on an aluminium pie plate. Salt and pepper the skin of the bird and put the pie plate on the grill. Move the chicken's legs out so it looks like it is sitting. The beer can will help stabilize the bird. Cook 375 degrees for about an hour.
The beer in the can will boil and steam the bird keeping it juicy.
