    2 tbsp. Vegetable Oil
    4 Chicken Breasts, trimmed
    Fine Sea Salt
    Freshly cracked White Pepper
    1/2 cup Knob Creek Whiskey
    2 Royal Gala or Rome variety apples, washed, cored, quartered and thinly
    sliced
    4 bunches scallions, ends trimmed, washed and cut into 2-inch long
    segments
    2 cups Mushroom Stock or Chicken Stock

    . Preheat oven to 375F.

    2. Preheat the saute pan over medium heat. Add the oil. When the oil begins to smoke lightly, season the chicken breasts with salt and pepper and place them in a single layer in the pan. Cook them for 3-5 minutes until the skin becomes light brown.

    3. Using a pair of kitchen tongs, turn the breasts over and add the whiskey to the pan. For safety reasons, remove the pan from the flame when adding the whiskey to avoid high flaming. Reduce the liquid over high heat for 2 minutes.

    4. Add the apple slices and the scallion segments and stir to blend the ingredients. Add the mushroom or chicken stock and baste the meat with the liquid. Place the pan in the center of the oven and cook, undisturbed, 12-15 minutes.

    5. Check the breast meat to make it is thoroughly cooked. There should be no sign of pink. Season the meat again with salt and pepper. Serve the breasts whole or sliced, with the vegetables and cooking liquid on top.

    6. To serve: This dish is delicious without any accompaniment. If looking for a heartier main course, sauteed Brussel Sprouts or Fingerling potatoes are both delicious choice for this time of year.
