# 8 chicken thighs, skin removed
# 1/4 c. cherry preserves
# 1/4 c. rice wine vinegar
# 1/4 c. soy sauce
# 1 t. ground ginger
# 1 t. garlic powder
# 1/4 t. crushed red pepper
# 2 T. olive oil
# cilantro sprigs

Makes 4 servings
In a small bowl, mix together cherry preserves, vinegar, soy sauce, ginger, garlic powder and red pepper. In a large frying pan, place oil and heat to medium high temperature. Add chicken and cook, turning after about 10 minutes or until brown on all sides. Add cheriyaki mixture; cover and cook about 15 minutes or until chicken is fork tender. Uncover, turn chicken and cook two minutes more or until sauce is slightly thickened. Arrange chicken on a serving platter; spoon sauce over chicken.
