    4 chicken breasts (deboned)
    1 lg. can peeled tomatoes
    2 bunches green onion
    2 carrots (julienned)
    1 lg. zucchini (sliced)
    3/4 c. white wine
    3 cloves garlic (chopped)
    1 tsp. oregano
    1/2 tsp. lemon pepper
    1/4 tsp. thyme
    Salt to taste
    Rice
    Parmesan cheese
    2 tbsp. olive oil

    Recipe



    Cut chicken into bite size pieces and dredge in
    flour. Heat oil in a large pot and add spices. Saute
    for a minute then add chicken and brown. Next add wine
    and tomatoes with liquid. Stir in vegetables and let
    simmer for 20 minutes. Serve over rice and top with
    Parmesan cheese.
