1/2 cup butter or margarine
8 ounces mushrooms, thinly sliced
1/4 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
8 chicken thighs, skinned
1-1/2 cups heavy cream
1/3 cup white port wine Recipe
In a large skillet, over medium heat, melt butter; add mushrooms and sauté for 5 minutes. With a slotted spoon, remove mushrooms to a small bowl; set aside.
In a shallow pie plate, combine flour, salt, pepper, and nutmeg; dredge chicken thighs. In the same skillet, cook chicken thighs until browned on all sides.
Stir in cream, port, and mushrooms; heat to boiling. Reduce heat; cover and simmer for 15 minutes or until chicken is fork-tender.
