4 chicken cutlets
1/4 cup refined flour such as Wondra
Salt and pepper to taste
2 tablespoons butter
1/4 cup honey
1/4 cup lemon juice
1 tablespoon soy sauce
2 tablespoons peanut oil
Recipe
Cut chicken into 1-inch strips. Shake chicken in a plastic bag with flour, salt, and pepper, making sure chicken strips are coated evenly. Set aside.
Combine butter, honey, lemon juice, and soy sauce in a small saucepan. Place over medium heat and stir until butter melts and ingredients are well-combined. Bring to a boil. Remove from heat.
Heat oil in a deep-sided 10-inch frying pan or wok over medium-high heat. Stir-fry chicken strips until evenly browned and crisped on the exterior and no longer pink in the interior.
Drizzle butter-honey mixture over chicken until well-coated.
