    serves 4
    1 1/2# chicken tenders or boneless/skinless chicken breast cut into strips
    2 TBL clarified butter
    3 oz prosciutto - julienned
    1 bunch scallions - chopped
    2 TBL minced garlic
    1 1/2 cups red wine
    1 1/2 cups heavy cream
    3/4 cup bechamel
    1 cup frozen peas
    1# capellini (angel hair pasta), par-cooked
    1/2 cup grated parmesan
    salt & pepper to taste

    Heat a large saute pan over medium high heat. Add the chicken & brown. Add the garlic, prosciutto and scallions - continue to cook for 2 minutes. Deglaze with the red wine, reduce wine by half. Add the bechamel and cream, reduce until it eaches a thick sauce consistency - season with the salt & pepper. Add the peas and toss with the hot pasta. Divide onto four plates or serve family style; sprinkle with grated parmesan.
