4 chicken breasts, skinless, sliced partway through for stuffing
4 mushrooms, finely chopped
3 slices bacon
1/4 cup onion, finely chopped
2 tbsp butter
1 tsp brown sugar
1 tbsp flour
4 tbsps maple syrup
1 1/2 cups water
Recipe
Preheat oven to 375. In small skillet, sautee onions in butter and brown sugar until caramelized. Set aside in bowl. Fry bacon, remove from pan and sautee mushrooms in bacon fat. Remove mushrooms, chop bacon and mix with onion and 1 tbsp maple syrup. Stuff chicken, flour lightly and brown in remaining bacon grease. Arrange chicken in baking pan. Mix together 3 tbsps maple syrup with water and pour over chicken. Bake for 25-30 minutes, turning once. Serve with reheated, leftover stuffing spooned on top each breast and drizzle with sauce from pan. Mashed potatoes are a good complement - spoon sauce over potatoes as well.
