Cherokee Chicken

1/2 cup corn oil
6 pounds chicken pieces, skinned
2 cups bell pepper, chopped
2 teaspoons garlic, minced
1/2 cup onion, chopped
1/2 cup grape juice, concord
16 ounces cranberry sauce, whole
2 teaspoons salt
1/2 teaspoon pepper
Tips: You can omit bell peepr, if desired. You can also use Vermouth
instead of Concord grape juice.
Recipe
Skin chicken and brown in oil over medium high heat. Remove chicken from pan and set aside. To the pan, add optional green pepper, garlic and onion. Cook until tender. Add Vermouth or grape juice and cranberry
sauce, salt and pepper. Place chicken back into pan and simmer on low 25 to 30 minutes or until thickest parts of chicken slashed to the bone area are done and meat juices run clear. when chicken is thoroughly cooked, remove from heat and cool thoroughly.
To freeze: When cool, place the chicken and sauce in a labeled storage container, seal and freeze.
To serve: Thaw thoroughly then rheat in a covered pan on stove over medium low heat, in a 350 degree oven for 45 minutes or until hot, or in the microwave oven at 80 percdnt power for 20 to 30 minutes or until hot throughout.
Note: the length of reheating time will vary greatly depending on how deep or shallow the covered pan is.
