1 PERDUE ® Seasoned Roasting Chicken (4 ½ to 5 pounds)
1 cup sliced fresh crimini or portabello mushrooms
½ cup chopped onioin
2 cloves garlic, minced
1 can (14 ½ ounces) diced Italian style tomatoes
Salt and freshly ground pepper to taste
Grated Parmesan or Romano cheese (optional)

Preheat oven to 350° F. Remove giblets from chicken. Place chicken in shallow, flameproof roasting pan. Roast 1 ¾ hours or until BIRD-WATCHER ® Thermometer pops up and meat thermometer inserted in thickest part of thigh registers 180° F. Remove chicken to serving platter and keep warm. Pour pan drippings into a heatproof measuring cup or bowl. Skim off 3 tablespoons clear liquid from top of cup and return to roasting pan. Reserve remaining juices. Add mushrooms, onion and garlic to pan and sauté for 1 minute. Stir in tomatoes and reserved pan juices. Simmer over medium heat 6 to 8 minutes, until sauce begins to thicken. Remove and discard BIRD-WATCHER ® Thermometer. Slice the chicken. Serve with sauce over hot cooked ziti or other pasta. Sprinkle with cheese if desired.
