1 pound boneless, skinless chicken breast (cut into strips)
4 ounces olive oil
1 pound fresh chopped tomato
2 garlic cloves (chopped)
4 ounces red wine (dry red or rose)
pinch of salt
pinch of pepper
pinch of oregano
small amount of parsley or basil (chopped)

Recipe
Heat olive oil in pan. Flour chicken breasts and cook in oil for 4 minutes. Drain 1/2 of the oil. Add garlic, wine and tomato and cook for 1 minute. Add salt, pepper, oregano, parsley or basil and cook for 5 minutes. Serve over rice pilaf or spaghetti with greek style french fries.
