    List of Ingredients




    2 T. butter
    6-8 oz. fresh mushrooms, sliced
    2 whole chicken breasts
    3 C. lemon chicken sauce
    chopped parsley
    lemon rind, finely grated

    Recipe



    Roast the chicken in a 375 degree oven for 45 minutes. Cool, skin the chicken and remove from the bones. Slice into finger-like strips. Melt the butter in a saute pan. Add the mushrooms and cook, seasoning with some salt and pepper. When the mushrooms are limp, toss in the chicken and stir gently to combine. Add the warm chicken lemon sauce, mix well and bring to a mild boil. To serve, place some rice pilaf on a serving plate and spoon the chicken and sauce on top. Garnish with a generous dusting of chopped parsley and a final scattering of lemon rind.

    Serves 4.

    HINTS:
    All the ingredients can be assembled earlier in the day. The final put-together takes only minutes prior to service.
