Chicken Beans and Rice

1ea., 4 # chicken cut in 10 pieces
3 cloves garlic diced
3 peeled carrots, sliced
1 red or green bell pepper diced
1/4 C chopped Parsley
a pinch of saffron
1 C long grain white rice
1/2 large onion diced
2 medium Zucchini sliced in rings
3 stalks celery sliced
1/2 C chopped Coriander
smoked dried hot pepper to taste
20 olives with pits
1 can bean of your choice (drained)Recipe
pre-heat oven to 325
Season the chicken pieces with salt and pepper and whatever else you like .. Cumin ?? In a hot tall sided pan heat the oil, add the chicken in groups careful not to overcrowd the pan, do this in batches, and remove and hold on side when evenly brown. When the chicken is all done, to that oil add the vegets, seasonings and spices, saffron and toss well, place lid in and allow to steam a bit. Add the rice, the chicken, the herbs, olives, beans, and just under 2 C water or chicken stock, and bring to simmer. Once it simmers, place lid on and place in oven. Check in 20 minutes should be done... or darn close... check the rice...and chicken. Serve dividing per person.
