2 seasoned grilled or sautee chicken breast
1 chopped roasted red pepper
4 seasoned roasted or grilled portabella mushrooms-sliced
6 asparagus spears lightly steamed
2 tablespoons olive oil
2 tablespoons balsamic vinegar
½ cup beef stock
pinch of chopped parsley
Recipe
Sautee mushrooms
Add peppers and asparagus to pan
Deglaze with beef stock
Add vinegar
Bring to a boil
Serve over cooked chicken and garnish with parsley
