Chicken Colombo

* 1 2-1/2 lb. broiler chicken
* 3 chives
* 1/2 onion
* 1 lime
* 1 whole scotch bonnet pepper
* salt, pepper
* 1 seasoning bouquet
* 2.72 fl. oz cooking oil
* 3 Tbsp Colombo, or West Indian curry powder

Cut chicken into serving pieces and rub flesh with lime. Salt and pepper. In a dutch oven or 4-quart pot, add oil, and brown chicken over high heat.
Finely chop chives and onions and add to chicken. Lower heat, mix and add Colombo seasoning, as well as seasoning bouquet. Stir. Add enough water to cover the chicken. Salt sparingly, pepper, then add entire scotch bonnet pepper. Cook over low heat, covered, for 30 minutes.
Fifteen minutes into cooking time, add the chopped vegetables, cover again and cook for 15 more minutes.
