Chicken Gremolata

List of Ingredients
1/2 bunch fresh parsley
5 cloves fresh garlic, sliced
2 fresh lemons
1/2 C. mayonnaise
1 chicken, quartered
5-6 carrots, peeled and sliced into strips
1 red onion, peeled and quartered
1 sm. box mushroom caps
1-2 T. canola oil
white pepper
Recipe
Rinse and bud the parsley. Place in a food processor along with the garlic cloves. Grate the rind from the 2 lemons and add to the food processor. Blend until the three ingredients are well combined and chopped. This is gremolata, a classic Italian blend which adds a sprightly flavor to dishes. Next, place the mayonnaise in a mixing bowl and add 2-3 tablespoons of gremolata. Mix well, drop in the chicken and smear the mayonnaise mix evenly over the pieces. In a seperate bowl, toss the vegetables with the canola oil and some pepper. Place on a baking tray with the chicken and roast in a 375 degree preheated oven for 45 minutes. Serve the baked chicken with onion, pasta and rice pilaf along with some of the vegetables.
