6 ounces boneless chicken breast
Salt and pepper, as needed
Flour, as needed
1 ounces clarified butter
2 jumbo peeled and de-veined shrimp
1 clove of chopped garlic
1 ounce white wine
4 ounces heavy cream
2 ounces small diced tomato
1 tablespoon chopped scallions
1 tablespoon grated Romano cheese
2 ounces jumbo lump crab meatRecipe
1. Trim and beat chicken breast. Season with salt and pepper. Dredge in flour.
2. Saute the chicken in clarified butter on one side until light golden brown, approximately 3 minutes. Turn chicken over and add shrimp. Continue to saute until shrimp and chicken are cooked. Add garlic, cook about 30 seconds. Do not burn garlic.
3. Deglaze the pan with white wine, then add heavy cream and reduce about one minute. Add tomatoes, scallions and Romano cheese and continue to reduce for another minute. Add crab meat and simmer briefly until crab meat is warm. Serve over angel hair pasta. Serves 1.
