2 cups of cooked shredded chicken
2 tablespoons of olive oil
1 small onion, diced
2 eggs, beaten
1 (15oz.) can of diced tomatoes
1 small (8 oz.) can of corn
1 tablespoon of taco seasoning
2 tablespoons of sour cream
Lemon pepper to taste
Recipe
Boil chicken until thoroughly cooked through. When the chicken is cooked, pull the meat from the bone using a fork.
Add the 2 tablespoons of olive oil to a skillet and turn the heat on medium. Open the corn and drain away the liquid. Add the onion and lightly brown, then add half of the can of corn and all of the chicken meat and blend together.
Cook just until the meat is hot again, and then push the meat mixture to one side of the skillet. Add the beaten eggs to the skillet and cook, mixing and breaking the cooked eggs into fine pieces. When the egg is well cooked, blend it into the meat and onion. Add the can of diced tomatoes and the 1-tablespoon of taco seasoning.
Blend all of the ingredients together well and cook until hot. Serve hot, topped with 2-tablespoons of sour cream, sprinkled lightly with lemon pepper seasoning.
Serve with tortilla chips or bread and butter.
