    2 tablespoons olive oil
    1 garlic clove, crushed
    1 red bell pepper, seeded and diced
    1 pound boneless chicken breast, skinned and diced
    8 ounces small button mushrooms
    4 tablespoons dry white wine
    2/3 cup light cream
    8 ounces Danish blue cheese
    2 scallions, freshly chopped
    2 tablespoons chopped parsley

    Heat the oil in a large skillet. Add the garlic, red bell pepper and chicken with a little salt. Remember to go easy on the salt, because the cheese will likely make the sauce salty enough. Cook, stirring often, for 20 minutes, or until the diced chicken is lightly browned and cooked through. Add the mushrooms and cook 2 minutes, then pour in the wine and bring to a boil. Turn the heat to the lowest setting and make sure the mixture has stopped boiling
    before stirring in the cream and cheese. Do not allow the sauce to simmer or it will curdle. Cook only until the cheese has melted. Add a little salt, if needed. Serve over hot drained pasta.

    Serves 4.
