Chipotle Cranberry Glazed Turkey

# 1 cup water
# 3/4 cup sugar
# 1 12-ounce bag fresh cranberries
# 5 1/2 teaspoons TABASCO brand Chipotle Pepper Sauce
# 3 tablespoons unsalted butter
# 1 teaspoon salt
# 1/2 teaspoon fresh ground black pepper
# 1 (12-14 pound) turkey, rinsed and trussed Recipe
Combine water and sugar in a large saucepan and bring to a boil. Add the cranberries and 2 teaspoons TABASCO brand Chipotle Pepper Sauce, and return to a boil, stirring occasionally for about 6 minutes or until cranberries pop and soften. Transfer cranberries to a fine sieve set over a bowl and press contents through sieve, discard solids, and stir in 3 teaspoons TABASCO® brand Chipotle Pepper Sauce. Glaze can be made and refrigerated up to 2 days before it is needed.
Preheat oven to 325°F. Combine butter, salt, pepper and remaining TABASCO® brand Chipotle Pepper Sauce. Place the turkey in a large roasting pan, brush with the butter mixture and bake for approximately 11 minutes per pound for an unstuffed bird, or until an internal temperature of 180°F is reached.
1 hour and 20 minutes before the turkey will be done, begin glazing turkey with the cranberry glaze. Glaze the turkey liberally every 20 minutes, 3 separate times, and then roast turkey without basting for the last 40 minutes. Let turkey rest at least 30 minutes and then carve.
Makes 2 cups glaze.
