List of Ingredients
2 T. peanut or vegetable oil
3 boneless, skinless chicken breasts
3 cloves garlic, finely chopped (1 T)
1 T. grated fresh ginger
1 cup chicken broth
2 T. honey
1 pink grapefruit, peeled and segments cut out
Recipe
Fry the chicken breasts in the oil in a saute pan over a medium high burner. When the chicken is just about done, about 3 minutes per
side, remove them to a plate and reserve. With the pan still on
the stove, add the garlic and the ginger, stirring it around to lightly
brown them off. Add the chicken stock, the honey and bring to a boil. Continue to cook the sauce until it reduces by about 1/2. Meanwhile, slice the cooked chicken breasts on the bias. When the
sauce is reduced, slide the sliced chicken into the pan. Arrange the
grapefruit slices on top of each breast, then spoon the sauce over all. Allow the dish to sit on the lowest burner setting for a minute so the
sauces can be absorbed. Serve the chicken with some rice, spooning the sauce over all.
HINTS:
Boneless, skinless chicken thighs will work well in this recipe as well.
Eliminating the grapefruit still makes for a nice entree.
