FLOWER DRUM SONG CHICKEN

4 whole chicken breasts, de-boned,
skinned, and cut in 1-inch cubes
1 T. cornstarch
1 T. dry sherry
1 T. soy sauce
2 T. peanut oil
1/4 lb. fresh mushrooms,
coarsely chopped
1 green bell pepper, coarsely
chopped in 1-inch pieces
1 heaping T. hoisin sauce
Salt, to taste
1/3 C. cashews
Recipe
Sprinkle chicken pieces with cornstarch and toss until thoroughly coated. Add sherry and soy sauce and marinate for at least 1/2 hour.
Heat oil until faintly smoking. Add chicken and sauté quickly until barely done. Add mushrooms and green pepper, and sauté for approximately 45 seconds.
Add hoisin sauce, salt and cashews, and toss until thoroughly mixed. Serve immediately.
