My dad was a New York City fireman during the 1960's and 70's. This is a recipe that I adapted from a dish they used to make at the firehouse.
The great thing about this recipe is that it's very simple to do, so with little effort you can make enough to feed a crowd or make a small batch for two. I'm basing this example on 8 pieces -- enough for four adults.
List of Ingredients
8 chicken thighs, skin on
8 garlic cloves, chopped
3-4 lemons depending on size
Olive oil spray
Butter spray
McCormick Lemon & Pepper seasoning salt
Chicken broth Recipe
Preheat oven to 350 degrees.
-Coat the bottom of a baking pan with olive oil spray. Place thighs in pan - don't crowd them.
-Spray the thighs with butter spray (Dad used real butter so substitute if you prefer).
-Toss garlic on and around chicken pieces.
-Halve the lemons and squeeze juice over each thigh.
-Slice those lemons and place a slice on each thigh.
-Sprinkle lemon pepper over each thigh.
-Pour chicken broth into the pan - enough to cover the bottom of the pan - chicken shouldn't be floating!
-Bake for 1 hour.
I like to serve this dish with rice, a green salad or vegetable and garlic bread.
