4 – boneless chicken breast halves
1 – tablespoons butter
1 – onion, sliced
1-1/2 – teaspoons curry powder
1 – fresh tomato, chopped
1/4 - teaspoon cayenne pepper
1/2 – cup milk
Recipe
In a frying pan, brown the chicken in butter. After browned, add the onions and curry powder. Reduce heat, stir ingredients and cook over low heat for 15 to 20 minutes. Turn the chicken during this cooking.
Add cayenne and tomatoes. Stir. Cover and simmer 1 hour.
Add milk, and heat through.
Makes 4 servings.
