    Rosalita's Voodoo Pepper Basil Garlic Stuffed Chicken

    I got this recipe from a voodoo priestess here in New Orleans and it has
    Haitian and Nawlins flavors.
    Preheat oven to 425 degrees.
    Prepare a stuffing
    sauteing 1/4 c each
    onion, celery in 1/2 stick margarine.
    Add 1/4 tsp.each: sage, rosemary, oregano, parsley, s&p.
    Toss with a leftover shredded baguette (French bread)
    Add 1 shot rum
    enough water to moisten and knead into a stuffing.

    Wash and bless a small whole chicken, by putting a bit of salt in its
    cavity, thinking positive thoughts about those who will eat your meal, and
    rinsing out throughly. Throw the rest of the salt over your left shoulder
    and laugh.

    STUFF chicken.
    Place chicken in a roaster pan
    that has 3 sprigs of celery (with leaves)
    and several fresh garden chives if you have them.
    Take 13 cloves of elephant garlic and
    several basil leaves and
    stuff them inside the skin of the chicken sporadically on all sides,
    top and bottom.

    optional: (not for the faint of heart) Take 1 Scotch bonnet or habanero
    chile pepper (others like Cayenne may be used or substitute flakes to taste)

    Place it in chicken, inside the skin as well.

    Rub chicken with virgin green olive oil and salt and pepper it.

    Place in hot oven for 30 minutes and
    then turn the heat down to 350,
    add 1/2 cup water and cover with foil.

    Cook another hour or until done.

    Remove pepper pod if you can.

    Serve with rice.
