    3 - 4 pound chicken, cut up (or chicken parts)
    1/2 cup flour
    1/4 cup olive oil
    1 medium onion, chopped
    2 cloves fresh garlic, minced
    1/4 cup red or white wine vinegar
    1/2 teaspoon dried or fresh oregano
    1/2 teaspoon dried fresh thyme
    Salt
    Pepper to taste
    2 cups canned whole tomatoes
    1 chopped red or green bell pepper
    1 cup sliced fresh mushrooms
    1/4 cup chopped black olives
    1/4 cup white wine

    Coat the chicken with flour. The simplest way to do this is by the old fashioned method of placing the flour in a paper bag, adding the chicken, and then shaking to coat with flour.

    Heat oil in a large frying pan. Brown chicken on both sides (this may have to be done in two batches). Remove the chicken and add onion and garlic to the pan. Fry just until limp, then stir in wine vinegar and seasonings. Add tomatoes, breaking up any large pieces. Next, add pepper, mushrooms, olives, wine, and chicken. Cover and simmer until chicken is tender--about 45 minutes. This dish can also be baked in a 350° oven for 45 minutes. Your favorite pasta may be served with the chicken. Be sure to have some crusty Italian bread to dunk in the flavorful juices.
