ISIS Theater Chicken

List of Ingredients
1 cut up EMPIRE CHICKEN
oil to brown chicken
1-2 cloves of crushed garlic
1 medium onion thinly sliced
2 cups AUNTIE RIVKA's chicken soup (as adapted by my mother so as it should taste better)
1 cup or as much as you need leftover wine from the Shabbes Kiddish (if there in no wine leftover don't open a new bottle--just use more chicken stock)
3 or 4 zucchini--cut these lengthwise first, then cut them up into pieces about 2"long. Leave the skins on--it adds color.
salt and lemon pepper to season
1 or 2 carrots peeled and sliced very thin
1 - 2 teaspoons of dried dill
black olives (yes you can use green but you want to add color to this dish) Recipe
A handful will do. One of Auntie's handfuls of olives amounted to what was left in the jar in the fridge or if that was too much, about one cup. For the mathematicians out there who want to be accurate, how about 24 little black olives PITTED.
If you have children (and even if you don't) PLEASE use PITTED olives. I could describe many a dinner where my brothers and I used to see who could spit the olive seeds across the room further when Mom was in the kitchen getting another dish. It takes skill. Believe me.
Fry the onion in a small amount of oil until it is translucent (clear). Set aside.
Brown the chicken in a large skillet on the stove. Brown both sides of the chicken. Ok, for you on the diet, please skin the chicken first. Pour off excess fat. You may wish to now transfer the chicken to a large Dutch-oven. If you do this you will bake the chicken in the oven for about 45 min at 350. OR you may continue in the large skillet and cook on top of the stove. The choice is yours. If you do the first choice you can call it BAKED Isis Theater Chicken.
Put the chicken pieces back into the pan one by one. Add the chicken stock and/or wine, onion and garlic. Cover and SIMMER on the stove for about 35-45 minutes or until the chicken is tender. If the liquid evaporates too quickly simply add more. As Auntie used to say "This is not a chemistry class, you don't have to be so exact.. A little more or a little less won't hurt you... Don't stand over me and count the olives...Ask your mother..."
Now add the vegetables. Cook for another 15 minutes or so until the vegetables are tender, but are still brightly colored.
Add the dill and mix thoroughly.
Add the olives and heat long enough just so the olives are WARM.
Transfer to a serving dish (Unless you are using an-oven-to-table type of cook ware). Mom would never do this. She said it was "prost". That was why she had the ISIS Theater serving dishes!
Mom would transfer the chicken to a serving dish. Now add the salt and lemon pepper for seasonings. (You may use whatever seasonings you like.)
She would take a green onion, and run the knife lengthwise down the green stalk. She would then spread the onion apart like a far and put this on top. She would also garnish with fresh dill.
