    1 8 oz. can tomato paste
    1/2 C. orange juice
    1/2 C. finely chopped onion
    2 Tbsp. raisins
    1/2 C. pineapple chunks
    1/2 tsp. dried oregano
    1 clove garlic, crushed
    12 oz. chicken, cut in strips
    2 tsp. cornstarch
    1 Tbsp. water
    1/4 C. snipped parsley
    3 C. hot cooked rice
    3 Tbsp. CTHT Smoked Habanero Hot Sauce

    Recipe



    In a large skillet combine tomato paste, onion, orange juice, raisins, oregano, garlic, and CTHT hot sauce.
    Bring to a boil, reduce heat, cover and simmer for 5 minutes.
    Stir in chicken and return to a boil.
    Lower heat, cover and simmer 12-15 minutes or until chicken is no longer pink.
    Meanwhile, in a separate bowl whisk cornstarch and water.
    Stir cornstarch mixture into chicken.
    Cook and stir until sauce thickens.
    Add pineapple.
    Toss parsley with rice.
    Serve chicken over rice with sauce.
    Serves 6
