    1/4 cup vegetable oil
    1 chicken, cut into 8 pieces
    2 teaspoons chopped fresh ginger
    2 cloves garlic, crushed
    Salt and pepper, to taste
    1/2 teaspoon red chili powder
    6 medium tomatoes, seeded and chopped
    3 hot chili peppers, cored, seeded, and chopped

    In a large flameproof casserole, heat the oil. Add the chicken pieces, ginger, and garlic. Cook over medium heat, turning often, for 5 minutes.

    Turn up the heat and continue cooking for a few minutes or until the moisture in the pan evaporates.

    Add salt, pepper, chili powder, tomatoes, and chili peppers to the chicken. Stir well. Lower the heat, cover the pan, and cook the chicken for 15 minutes or until it is cooked through.

    Turn up the heat and cook, stirring often, until the excess liquid in the pan evaporates. There should be very little sauce in the pan.

    Serve with naan.

    Serves 6.
