1 8 oz. can sweetened condensed milk
1/3 cup whole milk
1/2 cup coconut, flaked
6 firm ripe bananas, cut lengthwise
3 cups corn flake crumbs
2 pounds chicken parts, cut-up, assorted
3/4 cup unsalted butter, melted
1/4 cup lemon juice
star fruit or kiwi for garnish
Recipe
In a food processor, blend condensed milk, coconut, and lemon juice until smooth. Pour into a bowl. Dip bananas into milk mixture; roll in the corn flake crumbs and set aside.
Dip chicken into remaining milk mixture; roll in the remaining corn flake crumbs and place in two greased 13 x 9 x 2 inch baking pans. Sprinkle with 1.2 cup of the melted butter. Bake, uncovered at 350 degrees for 1 hour.
Arrange bananas over chicken. Sprinkle with remaining butter. Bake 15 minutes longer or until chicken juices run clear.
Garnish with star fruit and kiwi.
