    1 tablespoon butter
    1 tablespoon olive oil
    4 boned chicken breasts, cut in half
    8 shallots
    2 tablespoons flour
    200ml (8floz) red wine
    200ml (8floz) chicken stock
    salt
    freshly ground black pepper 4 sprigs thyme
    2 teaspoons lavender flowers
    grated zest and juice of 1 lemon


    Garnish:
    1 orange, divided into segments
    12 lavender sprigs
    4 teaspoons lavender flowers

    Recipe



    Heat the butter and olive oil in a heavy pan and add the chicken pieces.
    Brown all over. Transfer to a large casserole.
    Cook the shallots in the frying pan for 2 minutes. Add to the casserole.
    Add the flour to the frying pan, stir and cook for 2 minutes. Pour in
    enough wine and stock to make a thin sauce, bring to the boil, stirring
    all the time, and season to taste.
    Stir in the thyme sprigs, lavender flowers, orange zest and juice.


    Pour the sauce over the chicken. Cover the casserole and cook for 30-40
    minutes until tender. Remove the thyme sprigs before serving.
    Serve garnished with orange and lavender flowers
