List of Ingredients
1 lb. (500 g) Granny’s boneless, skinless chicken thighs, cut in half
2 Tbsp (30 mL) oil
1 large onion, chopped
2 cloves garlic, crushed
2 Thai chilies (or 1 jalapeno pepper), finely chopped
2 Tbsp (30 mL)brown sugar
3 Tbsp (45 mL) soy sauce
3 Tbsp (45 mL) vinegar
2 Tbsp (20 mL)water
½ tsp (2 mL) salt
Recipe
Heat oil in a skillet over medium heat. Stir-cook onion, garlic and chilies for about 5 minutes. add 1 Tbsp (15 mL) brown sugar and continue stirring until onions are golden brown.
Add chicken and brown on all sides. Mix 1 Tbsp (15 mL) brown sugar with soy sauce, vinegar, water and salt and stir into chicken mixture. Bring to a boil, reduce heat and simmer for 20 minutes or until chicken is no longer pink and sauce has thickened slightly.
Serve over rice or rice noodles.
