# 4 boneless skinless chicken breast halves
# 4 slices boiled or cooked ham
# 4 slices mozzarella cheese
# BREADING:
# 1 cup instant potatoes
# 1/2 cup grated Parmesan cheese
# 2 tablespoons flour
# 1 tablespoon Season All seasoning salt
# 2 eggs
# Cheese Sauce (recipe follows)Recipe
Preheat oven to 375 degrees.
With a knife, make a slit in the center of each chicken breast half to form a pocket. Roll a slice of ham and a slice of cheese together and insert in to each pocket.
In a bowl, mix together instant potatoes, grated Parmesan cheese, flour and seasoning.
In another bowl beat 2 eggs.
Dip each prepared chicken breast into beaten eggs and then into the instant potato mixture. Place in a baking dish sprayed with nonstick cooking spray. Bake in 375-degree oven for 45 or until chicken is done.
CHEESE SAUCE:
* 1 cup water
* 1 chicken bouillon cube
* 2 slices mozzarella chese
Bring water to a boil; add bouillon cube. Add mozzarella cheese. Stir together.
Pour over chicken and serve.
Makes 4 servings.
