2 ½ lbs. of pre-cut chicken
½ c. Jack Daniel's Old No. 7
¼ c. frozen orange concentrate
Grated zest of 1 lemon
Juice of 1 lemon
1 clove garlic, minced
½ tsp. Ground cumin
1 tsp. coarsely ground freshly black pepper
2 tsp. salt
12 tbsp. Minced cilantro
Recipe
Wash chicken, pat dry and place in large, heavy-duty resealable plastic food bag. In a small bowl, combine remaining ingredients and pour marinade over chicken. Seal bag and refrigerate several hours or overnight.
Drain chicken. Grill chicken, turning often, until slightly charred and cooked through, about 25 minutes.
Makes four to six servings.
