Orange Rice and Sunshine Chicken

Orange Rice:
2/3 C diced celery
1/4 C butter or margarine
1 1/2 C orange juice
1 C uncooked long grain rice
3/4 C water
2 T grated orange peel
1 T dried minced onion
1 tsp. salt
1/8 tsp. dried thyme
Sunshine Chicken:
1 lb. boneless chicken breasts, cut into 1/2-inch strips
2 T butter or margarine
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. ground ginger
2 C sliced carrots
1 small onion, sliced into rings
1 T cornstarch
2/3 C orange juice
1/3 C orange marmalade
3-4 T brown sugar
1 T lemon juice
Recipe
For the Orange Rice: Sauté celery in butter in saucepan until tender. Add remaining ingredients; mix well. Bring to boil. Reduce heat; cover and simmer 20 minutes or until rice is tender.
For the Sunshine Chicken: In a skillet, sauté chicken in butter for 4-5 minutes, or until lightly browned. Sprinkle with salt, pepper and ginger. Stir in carrots, onions.
In a small bowl, combine cornstarch and orange juice until smooth. Stir in marmalade, brown sugar and lemon juice; add to skillet. Bring to boil. Reduce heat; cover and simmer 10-15 minutes, or until vegetables are tender.
Present meal with garnish of orange slices. Serves 4.
