    PINEAPPLE TOPPED BAKED CHICKEN

    2 1/2-3 pound chicken, quartered
    3/4 cups Nabisco Cracker Meal
    1/3 cup grated Parmesan cheese
    1/3 cup finely chopped walnuts
    1/2 teaspoon salt
    2 tablespoons chopped parsley
    1 egg, lightly beaten
    1/4 cup milk
    6 tablespoons shortening
    1 8-ounce can pineapple rings, drained and cut in half

    Wipe chicken well with damp paper towels. Place next 5 ingredients in
    shallow bowl. Pour beaten egg and milk into a pie plate. Dip children pieces
    in egg mixture, then drain. Roll in cracker meal mixture, a few pieces at a
    time, coating well. In large skillet, heat half of shortening; brown chicken
    lightly, a few pieces at a time. Repeat. Place in shallow baking dish. Bake
    in preheated 350-degree oven for 45-50 minutes or until tender. Ten minutes
    before end of baking time, place halves of pineapple rings on top of
    chicken. Brush pineapple with pan drippings.

    Serves 4.
