    Passion Fruit Glazed Duck

    List of Ingredients




    1 pc Moulard duck
    1 orange
    1 stalk celery
    10 oz passion fruit puree
    6oz orange juice
    8oz sugar
    1 pc ancho pepper
    8oz beef demi glace duck stock (if available)
    Salt to taste

    Recipe



    Open duck and remove giblets. Wrap the duck in a towel for 24 hours to dry any access moisture. Heat a roasting pan in a 450º oven. Place the duck in the pan breast side down and brown. Turn the duck on its sides and brown again. Place the duck on its back and roast for 45 minutes While the duck is roasting, combine the puree, orange juice, sugar and ancho pepper in a sauce pan and reduce by half. Add the demi glace and reduce again by ¼ Turn the oven down to 350º and roast for another 45 minutes, napping with the glaze every 10 minutes to coat well. When done, let the duck rest for 15 minutes before cutting.
    This goes great with braised cabbage!
