1/2 cup crushed cornflake crumbs
1/3 cup wheat germ
3 tablespoons unprocessed wheat bran
1- 1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup all-purpose flour
2 egg whites, lightly beaten
12 chicken drumsticks, skin removed Recipe
Preheat the oven to 375. Lightly spray a cookie sheet with nonstick vegetable spray and set aside.
In a shallow bowl combine the cornflake crumbs, wheat germ, bran, paprika, salt and pepper. Place the flour in another shallow bowl or plate. And put the egg whites in a separate bowl.
To coat the chicken: First roll the drumsticks in the flour to evenly cover all sides. Then dip the chicken in the egg whites and roll in the cornflake crumb mixture. Bake for 35 to 40 minutes until no longer pink and juices run clear.
Make 4 servings (3 drumsticks each)
