Rosemary Garlic Rubbed Cornish Hen

List of Ingredients
# 18-20 oz. Cornish Hen
# 1 tsp garlic
# 1 tsp rosemary
# 1 tbsp olive oil
# 2 oz Rapini
# pomegranate seeds
Cornbread Dressing
# 2 cups diced cornbread
# 1/4 cup diced onion
# 1/4 cup diced celery
# 1 slice julienne Nueskes bacon
# 1/4 cup dried cranberries
# 1/2 cup chicken stock
# 1/2 cup orange juiceRecipe
Mix olive oil with garlic and rosemary and marinate the bird inside and out. Roast in a 450 degree oven for 12-14 minutes and remove 1/2's from the bone. For the dressing, render bacon and remove the fat from the pan, add celery and onions and saute until soft. Add chicken stock orange juice and cranberries and simmer until cranberries are soft. Add cornbread and mix until all liquid is absorbed. Spoon into and oiled ramekin and reheat to order. Reheat hen to order, saute rapini with garlic and olive oil and season with salt and pepper. Place the dressing at 9 o'clock on the plate and top with the hen 1/2's. Place rapini behind the bird and drizzle the sauce around. Garnish with pomegranate seeds and parsley.
