    (Yield: 4 servings)

    2 thin slices Swiss cheese
    4 boneless, skinless chicken breast halves
    2 tablespoons all-purpose flour
    1/2 teaspoon pepper
    1 tablespoon butter or margarine
    1/2 cup chicken broth
    1/4 cup white wine
    1/4 teaspoon oregano
    Chopped parsley

    Cut each cheese slice in half. Place chicken breast halves between two pieces of waxed paper; pound to ½-inch thickness with the flat side of mallet.

    In a shallow pie plate, combine flour and pepper.

    Place 1 piece of cheese on each chicken breast half; starting with a short end, roll up tightly. Tie securely with string. Roll each chicken roll in flour mixture.

    In a large skillet, melt butter. Add chicken rolls; cook, turning frequently, until golden brown. Add broth, wine, and oregano; bring to a boil. Simmer 10 to 12 minutes or until chicken is cooked through and sauce is slightly thickened. Place on a serving platter; remove string. Garnish with parsley.
